Don’t you love all-in-one dishes that include carbs, proteins, fats, and vegetables? Then this soboro donburi ticks all those boxes! Soboro Donburi is a Japanese dish, and its name roughly translates to food cooked into crumbled pieces over rice. The crumbled food refers to ground meat (usually chicken), but most people add eggs and a green vegetable like okra or green beans for a more balanced meal. I decided to stray away from the classic and used beef instead of chicken, while also adding carrot as an additional topping. The dish is easily customizable; you can even add a pop of red with red bell peppers or purple with purple cabbage. It’s all up to you.
